  • 4 large russet potatoes
  • 1/4 C. unsalted butter
  • 1/2 C. sour cream
  • 1/2 C. shredded Cheddar cheese, divided
  • sea salt
  • ground black pepper
  • 1 handful chopped chives, for topping

Preheat your oven to 425 degrees F. Transfer the potatoes onto the rack in the center of your oven and bake for around one hour. When finished, remove from oven and lower heat to 400 degrees F. Create a slit in the top of each potato and remove the flesh of the potatoes. Transfer the potato insides into a bowl. Carefully mash the potatoes in the bowl and add the butter, sour cream, 1/3 C. cheese, salt, and pepper into the mashed potato mixture. Refill the potato shells with this potato mixture. Place the potatoes onto a baking sheet and cook in your oven for around 15 minutes, which is when they should be heated through. Sprinkle the remaining cheese on top of the potatoes when they are finished and bake for five additional minutes. Top with chives and serve. Feel free to top with any additional sour cream as well.
