Sure, beef stew might be an obvious crockpot classic. But when its seasoned up with rosemary and has been cooked in a thick savory sauce (with a hint of sweet), there is no better way to plan out lunch.

  • 1½ lb. beef stew meat
  • Salt and pepper to taste
  • 4 carrots, peeled and chopped
  • 1 onion, finely chopped
  • 2 lb. red potatoes, cubed
  • 2 T. extra virgin olive oil
  • 4 cloves garlic, minced
  • 3 T. flour
  • 2 C. beef broth
  • 1 T. Dijon mustard
  • 2 T. Worcestershire sauce
  • 1 T. soy sauce
  • 1 T. brown sugar
  • ½ T. dried rosemary
  • 1 tsp. thyme

Take chopped carrots, onions, and potatoes and place them in crock pot. In a bowl, season beef with salt and pepper and evenly coat with flour. In a large skillet, saute garlic until softened and fragrant and add in floured beef. Cook until browned on all sides and add to crockpot. In a separate bowl, whisk together beef broth, Worcestershire, mustard, soy sauce, brown sugar, rosemary, and thyme. Pour into crockpot and cook on high for 4 hours.
