You don’t have to settle for bland food while camping. Prepare these delicious potatoes and mushrooms that are doused in garlic and butter. Serve as a tasty side or main course.

  • ¼ C. vegetable oil
  • 6 yellow potatoes, halved
  • 1 C. sliced mushrooms
  • 1 Tbs. butter
  • 2 cloves of garlic, minced
  • 1 Tbs. red pepper flakes
  • 1 Tbs. parsley, chopped
  • Salt to taste
  • Pepper to taste

Over a campfire, place a standing metal campfire grill. Coat halved potatoes in oil. Place potatoes, cut side down in a cast iron skillet on indirect heat. Cook for 30-35 minutes. When there is about 5 minutes left, add mushrooms, butter, garlic and red pepper flakes. Stir often so garlic doesn’t burn. Once potatoes are golden brown, remove from heat.

Let cool for 5-10 minutes before serving. Season with salt and pepper. Garnish with parsley; serve.
