  • 8 slices toast
  • 8 thin slices mozzarella cheese
  • 4 thin slices prosciutto
  • 4 eggs
  • 2 Tbs. olive oil
  • 1/4 tsp. salt

Place 1 slice cheese and 1/2 slice prosciutto between 2 slices of toast. Fry each egg in olive oil and on one side and place a fried egg on each sandwich. Sprinkle with salt and place all sandwiches on a greased baking dish. Bake in oven at 400 degrees for 15 minutes.
