Ingredients

  • 2 T. instant coffee
  • 1/4 C. hot water
  • 1/4 C. unsalted butter
  • 1/4 C. dark chocolate chips
  • 1 1/2 C. flour
  • 1 1/3 C. sugar or sweetener
  • 1/2 cup unsweetened cocoa
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 C. chopped walnuts
  • cooking spray

Preheat oven to 350º.

Coat cast-iron skillet with cooking spray and set aside. In a small bowl combine hot water and instant coffee, stir until dissolved completely. In a microwave-safe bowl put butter and chocolate chips, microwave on high for about a minute or until butter milks. Stir mixture until chocolate is smooth.

In a large mixing bowl combine dry ingredients, whisk together well. In another medium bowl combine coffee mixture with eggs, vanilla, and butter mixture, whisk until completely combined. Slowly add dry ingredients to wet, whisking until everything is well incorporated. Stir in walnuts.

Pour batter into skillet and let bake for 22 minutes, or until center is set. Let cool before serving.
