Mrs. Perry's Crockpot Pumpkin Tea Bread

This crockpot pumpkin tea bread recipe is great for breakfast or afternoon tea.

  • 1/2 C. oil
  • 1/2 C. sugar
  • 1/2 C. brown sugar
  • 2 beaten eggs
  • 1/2 canned pumpkin or 1 C. pumpkin puree (from scratch)
  • 1 1/2 C. flour
  • 3/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 tsp. soda

Blend oil and two sugars. Stir in beaten eggs and pumpkin. Add dry ingredients. Pour batter into greased coffee can. Place can in crock pot. Cover top of can with 6 to 8 paper towels. Place lid on top. Bake on high for 3 to 3 1/2 hours.

  • I made this for Thanksgiving. I used a small (1 lb?) coffee can and it fit perfectly into my small-ish crock pot. It tasted fabulous. I made french toast with it the following morning and served it with "maple butter." (I added some maple syrup to some margarine.) It was awesome. Hope this helps.

  • Pumpkin is 1 cup so just get a small can. For an oval crock pot just use a loaf pan that would fit. A coffee can won't fit. I haven't tried this but am going to.

  • It needs to ssay what size coffee can, also what type of crockpot, the tall or the oval? Could I use a bread pan that fits in my crockpot?
