These easy popovers are a moist and delicious treat for breakfast or brunch.

  • 4 eggs
  • 1 1/2 C. whole-wheat pastry flour
  • 1 1/4 C. low-fat milk, rice milk, or soy milk
  • 1 1/2 Tbs. safflower oil
  • 1 tsp. salt
  • butter or margarine
  • fruit preserves

Preheat the oven to 450 degrees.  Grease two nonstick muffin tins.  Beat the eggs, then whisk in half of the flour and half of the milk.  Add the remaining flour and milk and whisk the mixture until it is smooth.  Whisk in the oil and salt.  Pour the batter into 12 greased, nonstick muffin cups.  They should be filled about three-quarters of the way.  Bake for 15 minutes, or until golden brown and puffy.  Be sure not to open the oven door while the popovers are cooking.  Serve immediately with margarine, butter, or preserves.

  • Will someone tell me what exactly is pastry flour? I find whole wheat flour, did I just not pay attention when I was looking? I am NOT even a baker, but I would like to try this recipe. Also, I am the absolute worst at knowing how to measure flour. Seems it can vary so much. Help?
