Multigrain Brown Bread

  • 1 C. whole-wheat pastry flour
  • 3/4 C. rye
  • 1/2 C. cornmeal
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 C. yogurt
  • 2/3 C. milk
  • 1/3 C. maple syrup
  • 2 Tbs. safflower oil

Preheat oven to 350 degrees.  Grease a 9 by 5 by 3 inch loaf pan.  Combine flours, cornmeal, baking soda, and salt in a mixing bowl and mix together.  Combine remaining ingredients in another bowl and whisk together until smooth.

Make a well in the center of the dry ingredients and pour in wet mixture, using enough milk to make a smooth, stiff batter.  Stir together until smooth.

Pour batter into prepared pan, bake for 40 minutes, or until golden brown and cooked through.  Cool and slice.
