Mushroom and Celery Salad

Ingredients
- 12 oz. white mushrooms, sliced paper-thin
- 2 celery ribs, thinly sliced
- 2 med. carrots, thinly sliced
- 2/3 C. olive oil
- 2 Tbs. lemon juice
- salt
- pepper
- 1 wedge parmesan cheese
Directions
On a large platter, toss the mushrooms, celery and carrots together. Whisk together the oil, lemon juice and salt and pepper to taste. Pour the dressing over the salad. Toss well. Shave pieces of the parmesan cheese over the salad, then serve.
