  • 2 (15 oz.) cans vegetable broth
  • 1 (15 oz.) jar roasted red peppers, drained and chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 C. mushrooms, sliced
  • Parmesan for garnish
  • Cherry tomatoes
