  • 2 C. water
  • 8 oz. spaghetti noodles
  • 2 lb. boneless, skinless chicken breasts
  • 1 Tbsp. olive oil
  • 1 1/3 lb. mushrooms, sliced
  • 1 C. dry sherry
  • 1 Tbsp. flour
  • 2 C. milk
  • 1/2 C. grated Parmesan cheese
  • 1/2 C. sour cream
  • 1/3 C. chopped parsley
  • 1 tsp. salt
  • 1/2 tsp. ground pepper

Boil the noodles until al dente, drain, and set aside. Meanwhile, put the chicken in water and simmer covered for 15 minutes. Heat oil in a skillet over medium and add the mushrooms. Cook while stirring about 12 minutes. Add the sherry and cook another 5 minutes. Sprinkle flour on the mushrooms and pour in the milk. Cook for 1 minute and add the Parmesan, sour cream, parsley, salt, and pepper. Preheat the oven to 350 degrees. Cut the chicken into pieces and spread the noodles into a baking dish. Top with the chicken and pour the sauce on top. Bake the casserole for 30 minutes until bubbling. Top with mozzarella if desired and serve.
