Mushroom Gravy

  • 3 Tbs. arrowroot (thickener)
  • l lg. chopped onion
  • l lb. sliced mushrooms
  • 4 C. water
  • l pkg. no-oil salad dressing mix (preferrably one with garlic and cheese)
  • 2 Tbs. low-sodium soy sauce

Make a paste by stirring some of the cold water into the thickener until a creamy consistency is reached. Saute onion in water in a non-stick pan and add the mushrooms. Stir until browned or beginning to cook. Cover with remaining water, add the salad dressing mix and soy sauce. When very hot, stir in the thickener. Continue to stir until smooth. Allow to boil lightly. Remove from heat and cover.
