  • 1 pie crust, unbaked
  • 4 C. mushrooms, sliced
  • ½ onion, sliced
  • ½ red bell pepper, chopped
  • 4 eggs
  • 1 ¼ C. milk
  • 2 T. flour

Place pie crust in a pie pan and bake for about 10 to 15 minutes at 450 degrees. Remove from oven, set aside, and reduce heat to 350 degrees. In a large greased skillet, sauté mushrooms, onion, and bell pepper until tender. In a bowl, whisk together eggs, flour, milk, and any seasonings or cheese you might want. Pour into pie crust and top with sautéed veggies. Bake for 40 minutes until an inserted knife comes out clean.
