  • 2 teaspoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 8oz mushrooms, diced + 4oz, sliced
  • 1 tablespoon tomato paste
  • ½ cup beef broth
  • 1¼lbs beef meatloaf mix
  • 1 egg
  • ½ cup Monterrey Jack cheese, grated
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 teaspoon dried thyme
  • 28oz diced tomatoes

In a large skillet, heat the oil and cook the onions and garlic until soft. Add the mushrooms and cook until liquid is released and mushrooms have browned. Add the tomato paste, broth and cook until a glaze forms. Remove from heat and cool. Preheat the oven to 375F. In a bowl, combine the meat, egg, cheese, salt, pepper and thyme. Fold in half of the mushroom mix and mix until well blended. Shape the meat into a meatloaf shape and add to a greased baking dish. Add tomatoes to a saucepan with the remaining mushrooms. Season with salt and pepper to taste and cook for 2 minutes. Pour over the meatloaf and bake for 45 minutes, or until cooked through. Remove from oven and let sit for 10 minutes before serving.
