  • 1 package of pasta
  • 0.5 lb of mushrooms
  • 1 c. of cheddar cheese
  • 1 c. of pepper jack cheese
  • 1 c. of parmesan cheese
  • 1.5 c. of mayo
  • 1 tsp of herbs
  • 1 tsp of of oregano
  • 1 c. of spinach, chopped

Boil pasta with salted water by the directions on the package. Drain, set aside. In a mixing bowl, combine mayo, herbs, oregano, chopped spinach and parmesan cheese. Stir in the mixture into pasta, mix well. Add mushrooms, stir. Place the pasta into a buttered baking dish, and top with shredded cheddar and pepper jack cheese. Bake for 45 minutes, at 350 degrees, until the cheese is melted. Serve.
