Mushroom Penne

Ingredients
- 4 Tbs. olive oil
- 1/2 garlic clove, chopped
- 1 1/2 lbs. mushrooms, cut into pieces
- 1/8 tsp. salt
- 1/8 tsp. freshly ground pepper
- 2 tsp. parsley, chopped
- 1 lb. penne
- 4 qts. boiling water
- 2 tsp. salt
- 4 Tbs. grated parmesan cheese
Directions
Place oil, garlic and mushrooms in saucepan and cook gently for 15 minutes. Add salt, pepper and parsley and cook for 5 more minutes. Cook penne in salted water for 15 minutes and drain. Pour mushroom mixture over penne, sprinkle with grated cheese and serve.
