This is just as delicious as a chicken and penne meal, but it's vegetarian!

Ingredients

  • 4 Tbs. olive oil
  • 1/2 garlic clove, chopped
  • 1 1/2 lbs. mushrooms, cut into pieces
  • 1/8 tsp. salt
  • 1/8 tsp. freshly ground pepper
  • 2 tsp. fresh parsley, chopped
  • 1 lb. penne pasta
  • 4 qt. boiling water
  • 2 tsp. salt
  • 4 Tbs. grated parmesan cheese

Directions

Place oil, garlic and mushrooms in saucepan and cook gently for 15 minutes. Add salt, pepper and parsley and cook for 5 more minutes. Cook penne in salted water for 15 minutes and drain. Pour mushroom mixture over penne, sprinkle with grated cheese and serve.
