Mushroom Potato Quiche

- 4 Eggs
- 1 cup Half-and-half
- 1 cup Shredded Gruyere Cheese
- 1 tsp Salt
- ½ tsp Ground Nutmeg
- ¼ tsp White Pepper
- 3 Tbsp Butter
- 2 cups mushrooms
- 1 cup red pepper
- 1 cup green pepper
- 2 cups Peeled Potatoes, cut into ½" cubes
- Pre-made Pie Crust
Combine eggs, half-and-half, cheese, salt, nutmeg, and pepper in a mixing bowl and set aside.
Place a skillet over medium heat and melt butter.
Add mushroom, peppers, and potatoes to the skillet and cook for ten minutes.
Then add to the pie crust.
Add the egg mixture to the crust and bake for 15 minutes on 425 degrees.
Lower heat to 325 degrees and continue baking for another 40 minutes.
