  • 1 Pie Crust, frozen prepared or homemade
  • 2 cups Fresh Mushrooms, sliced
  • 5 Eggs
  • 1 cup Heavy Cream, i use ½ and ½
  • 1½ cups Shredded Swiss Cheese
  • ½t Dried Thyme
  • ¼ tsp Cayenne Pepper
  • 1 tsp Dry Mustard

Preheat oven to 350 degrees. Prepare pie crust according to directions for 10" glass pie plate. Spread the sliced mushrooms on the bottom of the pie crust. Spread shredded cheese over the mushrooms. In a medium bowl, mix eggs together; add cream and spices. Mix well; gently pour egg mixture over all. Bake in center of oven for 45-50 minutes until risen and nicely browned. A knife inserted in middle will come out clean. Remove from oven and let set 5 minutes. Slice into 6 servings and serve with sliced avocado and tomato.
