Mushroom Shrimp Appetizer

Ingredients

  • 1 celery rib, halved
  • 1/2 sm. onion
  • 1 sprig fresh thyme
  • 1/2 lemon + 1 Tbs. lemon juice
  • 3 whole peppercorns, crushed
  • 1/8 tsp. hot pepper flakes
  • 12 oz. med. shrimp, shelled and deveined
  • 1/2 C. mayonnaise
  • 1/2 C. chopped tomato
  • 1 Tbs. finely chopped fresh basil
  • 1/8 tsp. pepper
  • 8 oz. fresh mushrooms, quartered
  • 12 romaine lettuce leaves

Directions

In a medium saucepan, bring 6 C water to a boil with celery, onion, thyme, 1/2 lemon, peppercorns and hot pepper flakes. Boil for 3 minutes. PLace shrimp in boiling water and cook until they just turn pink. Drain in a colander and rinse under cool water. Transfer shrimp to a boil. Discard veggies and lemon half. In a small bowl, combine mayonnaise, tomato, basil, pepper and 1 Tbs. lemon juice. Beat with a fork to blend. Add mushrooms and shrimp and toss to coat. Pile salad onto lettuce leaves.
