Mushroom Soup

Add this healthy vegetable soup to your autumn menu.

Ingredients

  • 1 lb. fresh mushrooms
  • 1 onion
  • 3 Tbs. butter
  • 1 Tbs. olive oil
  • 1 split clove of garlic
  • 1/4 C. tomato paste
  • 5 C. chicken stock
  • 1 tsp. marjoram
  • salt and pepper
  • 1 tsp. lemon juice
  • 3 Tbs. red wine

Directions

Mince onion with a food processor fitted with a steel blade. Cook the onion and clove of garlic in a heavy saucepan in one Tbs. butter and olive oil until just beginning to brown. Discard garlic. Separate mushroom stems from caps. Mince the stems and one C. of mushroom caps in the food processor. Add to onions with two Tbs. butter and sauté' about five minutes. Add tomato paste and chicken stock, mixing well. Add seasonings, lemon juice and wine and simmer ten minutes. Taste for final seasoning.
