Mushroom-Stuffed Chicken

Ingredients
- 4 boneless skinless chicken breasts
- 2 C. Mozzarella cheese
- 1 1/2 C. mushrooms, sliced
- 6 Tbs. butter, divided
- 1/4 C. flour
- 3 C. chicken broth
- 2 Tbs. dry sherry
- 6 Tbs. sour cream
- Salt and pepper to taste

Preheat oven to 400 degrees F. Open up each chicken breast. Season both sides with salt and pepper to taste. Pound between 2 sheets of plastic wrap. Place cheese and mushrooms equally on each chicken. Press down. Roll up chicken tightly and then roll each piece in parchment paper. Twist to seat chicken inside. Place seam-side down on baking sheet. Bake for 25 to 30 minutes.
