My Down Home Soul Food Meatloaf

My down home meatloaf will keep your family and friends coming back for more. This looks great on the dining room table!

Ingredients

  • 3-4 lb. ground beef
  • 3/4 C. fresh bread crumbs
  • 1 lg. green pepper, chopped
  • 1 lg. onion, chopped
  • 1/2 tsp. olive oil
  • 1 1/2 Tbs. dried thyme
  • 2 1/2 tsp. garlic powder
  • 1 1/2 Tbs. nature's season
  • 1 1/2 Tbs. old bay seasoning
  • 1 tsp. cayenne pepper
  • salt and pepper to taste
  • 1/2 C. chicken stock
  • 1/2 C. tomato sauce
  • 1/2 C. ketchup
  • 1/2 C. barbecue sauce
  • 3/4 Tbs. Worcestershire sauce
  • 3 lg. eggs, beaten

Directions

Place all the ingredients into a large bowl, mix well. Spray with cooking spray one 8x11 baking pan or glass dish. shape into a loaf and place it into pan. Put in oven at 350 degrees for 40-45 minutes depending on temperature of oven.

  • I was going to try this, but the proportions are too vague for me.h as 3 to 4 lbs of ground beef, but only 3/4 C of bread crumbs...... no, maybe not.
