Normally, I avoid cauliflower at all costs. But a local Chicago area pizza chain makes fried cauliflower that's absolutely delicious. The cauliflower becomes so soft and the flavor is almost cheesy! Serve with some marinara.

  • 1 head cauliflower, cut into florets
  • 1 egg
  • 2 tsp. milk
  • 1 C. crackers, finely ground
  • 1 C. pretzels, finely ground
  • 4 C. peanut oil

Boil cauliflower in salted water for 5 minutes or until softned. Place into a bowl of ice water to immediately stop cooking and then pat until the cauliflower is very dry. 

Heat oil in a large pot or deep fryer to 375 degrees.

In another bowl, whisk the egg and milk until frothy. Pour the cracker crumbs and pretzels into a deep plate.

Dip cauliflower in the egg mixture then roll in cracker crumbs. Make sure to coat liberally. 

Fry breaded cauliflower in oil until golden brown. Place on paper towels to drain and serve hot.
