My Grandmother's Rice Pudding

Comfort food at its simplest. This rice pudding brings back childhood memories in the kitchen.

Ingredients

  • 3/4 C. Carolina rice
  • 1 1/2 qt. whole milk
  • 3/4 C. sugar
  • 3/4 tsp. salt
  • 1/2 tsp. vanilla extract
  • 2 eggs
  • nutmeg to sprinkle on top

Directions

Add rice, sugar and milk in a double boiler. Cook uncovered for approximately 2 hours, after 15 minutes, stir frequently so rice doesn't clump. Take off stove. Beat 1 or 2 eggs (depending on taste) and fold in mixture with the vanilla extract. Put in a large bowl, sprinkle with nutmeg, cover and refrigerate until cool and firm.
