My Grandmother's Rice Pudding
Ingredients
- 3/4 C. Carolina rice
- 1 1/2 qt. whole milk
- 3/4 C. sugar
- 3/4 tsp. salt
- 1/2 tsp. vanilla extract
- 2 eggs
- nutmeg to sprinkle on top
Directions
Add rice, sugar and milk in a double boiler. Cook uncovered for approximately 2 hours, after 15 minutes, stir frequently so rice doesn't clump. Take off stove. Beat 1 or 2 eggs (depending on taste) and fold in mixture with the vanilla extract. Put in a large bowl, sprinkle with nutmeg, cover and refrigerate until cool and firm.
