My Oh My Sweet Potato Pie

This is so good. Everyone loves sweet potato pie for Thanksgiving or any other fall occasion!

Ingredients

  • Crust:
  • 2 C. crushed pecan sandie cookies
  • 6 Tbs. melted butter
  • Filling:
  • 2 1/4 C. cooked and mashed sweet potatoes
  • 3/4 C. sugar
  • 1/2 C. brown sugar packed
  • 1/2 C. vanilla instant pudding
  • 3/4 C. evaporated milk
  • 2 large eggs
  • 6 Tbs. butter, softened
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 2 tsp. pure vanilla extract
  • 1/4 C. pure maple syurp

Preheat oven to 425 degrees. Mix melted butter and cookie crumbs, press into bottom and up sides of 9 ininch glass pie plate. Bake 5 minutes and let cool completely. Combine all pie ingredients listed, mix on medium speed untill well blended. Bake 10 minutes, then lower oven to 350 degrees and bake 40 minutes until set. Cool, then refrigerate. Serve with whipped cream.
