These nachos are my kids' and grandkids' favorite. They're easy to make and you can use ground beef, chicken or turkey. On a low sodium diet? No problem. Just get low sodium chips and low sodium taco seasoning. I use Ole El Paso brand ingredients but use what you like. This dish can be served out of the pan or put on a serving dish.

Ingredients

  • 1 lb. ground beef, chicken or turkey
  • 1 pkg. taco seasoning of choice (i.e. Ole El Paso)
  • 1 16-oz. can refried beans (with or without green chilies)
  • 1 can chopped green chilies
  • 2 plum tomatoes, chopped
  • 3-4 green onions, chopped
  • 2 C. grated Mexican cheese
  • 1/2 C. pitted black olives, sliced
  • sour cream
  • guacamole dip
  • salsa
  • 1 lg. bag tortilla chips

Directions

Brown meat in a large frying pan, drain and follow directions on package of taco seasoning. Once meat is done, add refried beans, stir and simmer to heat through. Line a baking sheet with foil and put meat mixture in the center of the pan. Spoon green chilies and green onions evenly over the top. Sprinkle on desired amount of Mexican cheese. Put chips around the meat mixture and place in a preheated 350-degree oven. Heat until cheese melts. Sprinkle tomatoes over the top. Serve on pan with sour cream, guacamole, and olives on the side.Alternative cooking method:

Recipe can be completely cooked in frying pan. Once meat mixture is finished, add the  chilies, onions and cheese, cover and continue to simmer on lowest heat until cheese melts. Serve on a platter or straight from the pan.
