Nana's Simple Homemade Stuffing

This is a stuffing recipe for turkey or chicken: it's easy, fun and so yummy! My grandmother from southern Illinois made this stuffing for our large family and we finished it off each year! Now we make it for our grandchildren!

Ingredients

  • 1 stick butter
  • 4-6 loaves white bread, stale
  • 2 eggs
  • 2 med. yellow onion, chopped
  • 3-5 ribs celery, chopped
  • bowl of water (for soaking bread)
  • sage
  • salt and pepper

Directions

In a large saute pan, melt the butter and saute the onion and celery until soft. While that cooks, dip the stale bread, two slices at a time, into the bowl of water. Squeeze the water out and place in large bowl. When onion and celery are cooked, pour them over the bowl of squeezed out bread. Add 1 tsp. at a time sage leaves, crumbling them first in your palm. Add enough for your taste- we use about 5 tsp. sage leaves. Add salt and pepper and mix stuffing with your hands. Stuff lightly into the bird of your choice and cook immediately. If cooking later, store stuffing in a covered bowl in the refrigerator until ready to cook. You can also use a meatloaf pan and cook at 350 degrees for 45 min.

  • I add the eggs to moisten and bind the stuffing, other recipes use chicken stock; I just use water and eggs so the flavor of sage, onion and pepper ring thru. My gravy gets the turkey stock that simmers all morning.
