Steamed mussels are a New England favorite, but now you can make them in the comfort of your own home with this recipe. You can add more pepper if you prefer spicier mussels, as well as substitute vegetable broth for chicken if you want a heartier broth.

  • 2 T olive oil
  • ½ C white wine
  • ½ C lemon juice
  • 1 C vegetable broth
  • 1 tsp red pepper flakes
  • 1 diced tomato
  • 2 cloves of minced garlic
  • 2 T butter
  • 1 shallot, minced

First, scrub mussels under cold water until clean. Heat olive oil in a large pot and saute garlic and shallot until soft. Next, add in the mussels, wine, lemon juice, red pepper flakes, and vegetable broth. Cook mussels and broth for about five minutes, or until mussels open.

Next, add tomato and butter and let cook until tomatoes have softened, but still retain their shape. Once mussels, broth, and tomatoes have cooked, serve hot.
