Next-Day Goose Salad

Ingredients
- 1/2 lb. leftover cooked goose
- 8 oz. chuck pineapple
- 1 oz. sliced almonds
- 1/2 tsp. caraway seed
- 1/4 C. mayonnaise
- 1/2 C. diced celery
- 1 tomato
Directions
Dice goose and pineapple to bite size, then combine with mayonnaise, celery, salt and pepper to taste. Serve on a bed of chilled lettuce, garnish with tomato wedges and almonds.
