Having beets for a dessert is a possibility! It's strange, yes, but you'll soon love to spread this mousse on your favorite cookie.

  • 3 red beets, boiled
  • 1 Tbs. lemon juice
  • 2 Tbs. beet juice, saved after boiling
  • 2 C. heavy cream
  • 4 Tbs. brown sugar

Place beets in food processor. Add lemon juice and beat juice. Puree until completely blended. Beat heavy cream in large bowl and then add sugar. Whisk until forming a firm peak. Gently fold in beet mixture until smooth. Chill for 30 minutes before serving. Feel free to spread mousse on your favorite cookies.
