  • 1 1/4 C. wafer cookie crumbs
  • 1/3 C. butter, melted
  • 2 8 oz. bricks cream cheese, room temperature
  • 1/2 C. sugar
  • 8 oz. reduced fat blueberry yogurt
  • 1 T. gelatin, dissolved in 1/4 C. boiling water
  • 1/2 C. blueberry puree
  • fresh blueberries for garnish

In a large bowl, combine cookie crumbs and butter. Press into the bottom of a 9-inch pie plate and freeze for 10 minutes. In another large bowl, beat together cream cheese and sugar until smooth. Add in yogurt and gelatin and mix until smooth. Fold in the blueberry puree. Spread the filling over the crust and refrigerate for 3 hours or until firm. Remove from fridge and garnish with fresh blueberries.
