  • Crust:
  • 1 1/3 C. vanilla wafers, finely ground
  • 2 Tbs. butter, melted
  • 2 Tbs. sugar
  • 1/8 tsp. ground cinnamon
  • salt
  • Filling:
  • 1 C. sour cream
  • 2/3 C. sugar
  • 4 oz. mascarpone cheese
  • 4 oz. cream cheese
  • 2 oz. soft fresh goat cheese
  • 3/4 tsp. vanilla extract
  • 1/4 tsp. lemon zest, finely grated
  • 1 C. heavy cream
  • 1 can cherry pie filling

To make the crust, coat a 9-inch pan with cooking spray. Stir together the cookies, butter, sugar, ground cinnamon, and a pinch of salt. Press evenly into the bottom of pan. Refrigerate while making the filling.

To make the filling, beat the sour cream, 1/3 C. sugar, all three cheeses, vanilla extract, and lemon zest on medium speed with a mixer for about 4 minutes, or until smooth. Pass the mixture through a fine sieve into a large bowl. In the first bowl, whisk in the heavy cream and remaining sugar until medium peaks form. Fold the heavy cream mixture into the filling and spread into the crust. Smooth top and freeze for at least 2 hours. Top with cherry pie filing before serving.
