No-Bake Chocolate Cherry Bars With Almonds

This decadent desert isn't as difficult as its taste would leave you to believe. No oven necessary for these bars!

Serving Size / Yield

8-12 bars


  • 1/2 C. pitted dates
  • 1/2 C. chopped pecans
  • 1/2 C. slivered almonds
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. almond extract
  • 2 oz. dried chia seeds
  • 1/3 C. dry cocoa powder
  • 1/2 C. ground cinnamon
  • 1/2 C. dried cherries

1) In a food processor, purée the dates. Add chia seeds, almond and vanilla extracts, cinnamon and cocoa powder; pulsing in the processor to mix well.Add pecans and almonds and continue to pulse in the processor. Add in the dried cherries and stir well.
2) On a large sheet of wax paper, spread the mixture evenly, about an inch thick (or as you prefer). Wrap these completely and refrigerate overnight.
3) Cut into squares and serve.
