No-Bake Chocolate Orange Mousse

- 2 C. bittersweet chocolate, divided use, finely chopped
- 3 large egg yolks
- 1/4 C. heavy whipping cream
- 3 Tbs. orange juice
- 1/4 tsp. salt
- 2 large egg whites
- 1/8 tsp. cream of tartar
- 1/4 C. sugar
Set a heatproof bowl over a pan of barely simmering water. Stir 1 C. chocolate until melted and smooth. Remove from the heat and whisk in the egg yolks, whipping cream, orange juice and salt until well blended. In a clean bowl, use an electric mixer set on medium-high speed to beat the egg whites with the cream of tartar until frothy. Add sugar and continue beating until mixture forms soft peaks.
Fold about one-third of the egg white mixture into the chocolate mixture until no white streaks remain. Gently fold in the remaining egg-white mixture until well incorporated. Spoon mousse into cups. Refrigerate overnight. If you desire, garnish with shredded orange peels before serving.
