These no-bake cookies only need a few simple ingredients to prepare, and add a festive flare to your dessert table! Serve these shaped into a snowman for an added touch of holiday cheer.

Ingredients

  • 1 1/2 cups unsweetened shredded coconut
  • 3 tbps maple syrup
  • 2 tbsp unsweetened coconut milk
  • 2 tsp melted coconut oil
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/8 tsp salt
  • Additional 2 tbsp of shredded coconut coating
  • Optional – chocolate chips and red candies to decorate

Directions

Take 1 cup of the shredded coconut and blend in a food processor with the coconut oil on high. Continue to blend, scraping down sides as needed, until it forms a paste-like consistency. Add in maple syrup, coconut milk, vanilla, cinnamon, and salt and process until well combined. Add 1/2 cup plus 2 tablespoons of shredded coconut and pulse until just combined.

Form mixture in 1 inch balls and roll in remaining coconut until coated.  To make snowmen, roll balls into 3 different sizes and stack together before cooling.  Decorate with chocolate chips and red candies.

Cool in refrigerator for at least one hour. Allow to warm to room temperature before serving.
