  • For Crust:
  • 2 C. Oreo, crushed
  • 1/4 C. butter, melted
  • For Filling:
  • 24 oz cream cheese, softened
  • 1/2 C. granulated sugar
  • 1 tsp vanilla extract
  • 8 oz frozen whipped cream, thawed
  • 1 1/2 C. Oreo, crushed
  • 5-8 Oreos, chopped, optional

Line a spring form pan with wax or parchment paper for easy clean up. In a small bowl, mix together the 2 cups of crushed Oreo crumbs and melted butter, and then press into bottom of pan. Place in refrigerator to set while making filling. Using an electric mixer, beat together cream cheese, sugar and vanilla until smooth Fold in whipped cream until well blended and creamy and then stir in Oreo crumbs. For an added treat, mix in large chunks of chopped Oreos. Pour batter over set crust and refrigerate 3-4 hours before serving.
