  • Crust:
  • 1 ¼ cup of graham cracker crumbs
  • 4 tablespoons of unsalted butter, melted
  • 2 tablespoons of light brown sugar
  • Filling:
  • 1 ½ cup of dark chocolate chips
  • 1 tablespoon of granulated sugar
  • 2/3 cup of heavy whipping cream
  • 3 tablespoons unsalted butter
  • Unsweetened cocoa powder

In a food processor, pulse together the graham crackers, melted butter, and light brown sugar until the crumbs become moistened. Place parchment paper into the pan and press the crumbs to create crust into a 9 inch metal pie plate. Store into the refrigerator.
In a large mixing bowl, place the dark chocolate chips.
In medium-sized sauté pan, mix together the heavy whipping cream, unsalted butter, and sugar in medium heat. Bring the mixture into a boil. When the bubbles began to appear, remove the pan and pour the mixture into the dark chocolate chips. Cover the bowl with a plate and let the dark chocolate melt into the mixture for 5 minutes. Stir the mixture until it becomes smooth and thick.
Fill in the chocolate mixture into the crust and smooth it out. Let it cool in the refrigerator for 3-4 hours or until it is set.
Before taking it out of the pan, take a knife and run it around the edges to release the sides. Sprinkle the pie with unsweetened cocoa powder.
