These no-bake healthy energy cookie balls make a wonderful and easy breakfast or dessert recipe. Serve these when you're in the need for a pick me up and you'll be set. We even love to cut a few of these up and place them into our cereal.

Ingredients

  • 1 C. dry oatmeal
  • 2/3 C. unsweetened coconut flakes, toasted
  • 1/2 C. low-sugar peanut butter
  • 1/2 C. cocoa powder
  • 1/3 C. agave nectar
  • 1 Tbs. chia seeds
  • 1 Tbs. vanilla paste

Directions

Mix all the ingredients in a large bowl or a stand mixer until thoroughly combined. Cover and chill for a half hour in the refrigerator. 

When chilled, use a greased ice cream scoop to help you roll them into balls. Store in an airtight container in the fridge prior to serving.
