No-Bake Healthy Energy Cookie Balls
Serving Size / Yield
- 1 C. dry oatmeal
- 2/3 C. unsweetened coconut flakes, toasted
- 1/2 C. low-sugar peanut butter
- 1/2 C. cocoa powder
- 1/3 C. agave nectar
- 1 Tbs. chia seeds
- 1 Tbs. vanilla paste
Mix all the ingredients in a large bowl or a stand mixer until thoroughly combined. Cover and chill for a half hour in the refrigerator.
When chilled, use a greased ice cream scoop to help you roll them into balls. Store in an airtight container in the fridge prior to serving.
