No-Bake Heart-Shaped Shortbread Sandwich Cookies with Cherry Filling

- 12 oz. shortbread cookies, crumbled
- 7 Tbs. coconut oil, room temperature
- cherry jam, for filling
Crumble the shortbread cookies in a food processor and add the coconut oil. Combine until it forms a thick paste. Pour mix into a greased 8X8 cookie sheet and refrigerate for 2 hours or until firm.
Once firm, remove from refrigerator and use a heart-shaped cookie cutter to cut the dough. Place the heart shaped cookies onto a plate, and fill with some strawberry jam. Top with another cookie half and serve chilled.
