Ingredients

  • 1 C. semi-sweet chocolate chips
  • 1⁄2 C. sugar
  • 3 T. light corn syrup
  • 1⁄2 C. Kahlua
  • 2 1⁄2 C. finely crushed vanilla wafer cookies
  • 1⁄2 cup powdered sugar or cocoa, optional for topping

Using a double boiler, heat and stir the chocolate over simmering water until completely melted. Slowly whisk in sugar and corn syrup. Once combined, slowly add in Kahlua and continue to whisk. Place the crushed cookies in a medium bowl. Add the chocolate mixture and combine. Shape into 1 inch balls, and top with powdered sugar or cocoa if desired. Place in a covered container and refrigerate 8-12 hours before serving.
