  • Cracker layer
  • 1 and 1/3 C. graham crackers, finely crushed
  • Mixed berry sauce
  • 3/4 C. frozen blueberries
  • 1/4 C. frozen raspberries
  • 1/4 C. frozen blackberries
  • 1 T. granulated sugar
  • 1 tsp. cornstarch
  • zest from one lemon
  • 2 tsp. fresh lemon juice
  • Cheesecake layer
  • 8 oz. cream cheese, room temperature
  • 1 tsp. vanilla extract
  • 1/2 T. heavy cream
  • 1 C. powdered sugar, sifted

For the berry sauce, heat all of the sauce ingredients in a small pot over medium heat. Allow to boil and then mash with a fork. Turn the heat down to medium. Simmer sauce on medium low until thickened. Remove from heat and set aside to cool completely before layering in parfaits.
To make the cheesecake layer, beat the softened cream cheese until smooth and creamy in a bowl. Mix in vanilla extract and heavy cream, and continue to mix until smooth. Slowly add the powdered sugar until everything is well combined.
Assemble the parfaits by layering one to two tablespoons of the graham cracker crumbs on the bottom of each serving glass, then the cheesecake mixture, and mixed berry sauce in alternating even layers. Top with mixed berries, and store in refrigerator to set for 30 minutes.
