  • 1 C. heavy cream
  • 1/8 tsp. almond extract
  • 3/4 C. sucralose
  • 1 packet unflavored gelatin
  • 2 tsp. fresh lemon juice
  • 1/2 C. sugar-free raspberry preserves
  • 6 oz. of fresh raspberries, rinsed and patted dry
  • 1 9-inch pie crust, baked and cooled

Add the cream and the almond extract to your mixing bowl and whip until stiff peaks begin to form. In a saucepan bring the sucralose, gelatin, and 1/2 C. of water to a simmer over medium heat and stir until the sucralose and gelatin dissolve. Add the 1/2 cup of sugar-free raspberry preserves and lemon juice to the still simmering mixture. Stir the mixture until it thickens. Fold the sweet berry mixture into the whipped cream. Using your spatula, slowly pour the cream filling into the waiting pie crust. Top the raspberry cream pie with the fresh raspberries. Chill for several hours before it firms up enough to slice and properly serve.
