No Fat Old Fashioned Apple Cake

Sure, 100 years ago it was ok to bake with lard, but in our modern times we've wizened up to the scary truth of fat. This cake has the same spicy taste of that 100-year old recipeā€¦ but without the fat.

  • 2 1/2 C. all-purpose flour
  • 1 C. sugar
  • 1 tsp. baking soda
  • 2 1/4 tsp. cinnamon
  • 1/4 tsp. ground nutmeg
  • 1/8 tsp. mace
  • 1 egg
  • 2 egg whites
  • 1 tsp. vanilla
  • 1/2 C. applesauce
  • 1/2 C. buttermilk
  • 1 1/2 C. tart apples; diced
  • 1/2 C. raisins
  • Brown sugar

Sift together flour, sugar, baking soda and spices. In a mixer bowl put egg, egg whites, vanilla, apple sauce and milk. Mix with electric mixer. Gradually add dry ingredients, blending well. Stir in apples and raisins by hand. Pour batter into 8x8 pan that has been sprayed with Pam. Sprinkle with brown sugar. Bake in preheated 350 degree oven for about 50 minutes.
