  • 1 lb. whole grain spaghetti or linguine pasta
  • 3 T. vegetable oil
  • 2 large eggs, beaten
  • 2 baby bok choy, thinly sliced
  • 1 small red bell pepper, halved and thinly sliced
  • 1 small bunch scallions, chopped into 3-inch lengths
  • 1/2 C. shredded carrots
  • 1 C. snow peas
  • 1 tsp. ginger
  • 2 large cloves garlic, minced
  • 1/4 C. soy sauce
  • 1 lime, juiced
  • 1 T. honey
  • 1 T. toasted sesame oil

Prepare and drain pasta according to box directions. In a large skillet, heat one tablespoon of oil over high heat. Add in eggs and lightly scramble. Transfer eggs to plate. Add in remaining oil and add bok choy, bell pepper, scallions, carrots, and snow peas. Cook for two minutes. Add in ginger and garlic. Cook for another minute. In a medium bowl, stir together soy sauce, lime juice, honey, and sesame oil. Combine vegetables with pasta and drizzle with sauce mixture. Toss to combine. Add egg and serve.
