Noodles and Co. Mac and Cheese
Serving Size / Yield
- 1/2 lb. macaroni
- 2 Tbs. butter
- 2 Tbs. flour
- 2 C. whole milk
- 1/2 tsp. salt
- 1/2 tsp. paprika
- 1/4 tsp. pepper
- 2 C. Monterey jack cheese, shredded
- 1 C. colby jack cheese, shredded
Heat a sauce pan over medium heat. Add the butter to the pan and melt, then add flour and whisk to make a roux.
Whisk until butter mixture starts to boil and foam. Then cook for another minute until it turns light brown.
Slowly mix in the whole milk. Whisk and cook until it starts to thicken.
Add salt, pepper, paprika and cheeses. Whisk until cheese is fully melted.
Serve in a bowl with sauce at bottom, macraoni, then shredded cheese on top.
