Noodles and Eggs

My mother used to make this for us when we were kids. There were five of us and she made this dish to make it spread out for all of us.

Ingredients

  • 1 12-oz. pkg. egg noodles (no-yolk)
  • 4 eggs, beaten
  • 1/2 C. milk
  • salt and pepper to taste
  • 2 Tbs. butter or margarine

Directions

Cook the noodles according to package directions. Beat eggs with milk. Melt butter in skillet. Add the cooked noodles. Stir until all the noodls are covered with butter. Add the egg mixture to the noodles, and add salt and pepper. Stir until the eggs are done. Do not brown. Add bacon or ham if desired while the mixture is coooking.

  • I never knew this was so easy and oh so good!! I used 6 eggs, 1 cup of chicken broth instead of the milk and added 1/2 C. of bread crumbs. A few more ingredients but boy oh boy was it delicious!! Thanks for sharing!! I say serves at least 4 adults.
