Norma's Oklahoma Chicken Recipe (Sapulpa)

You know once you read the name of this recipe it has to be good. Any recipe that is named after a person and a state has to be an original.

  • 8 chicken breasts, skinned
  • 1 can cream of chicken soup
  • 1 C. white cooking wine
  • 1 Tbs. basil
  • Salt and pepper to taste
  • 3-1/2 oz. jar chopped pimento, drained
  • 1 cup sour cream
  • Wild rice

Place chicken breasts in a large pan so that meat is in a single layer. Combine soup, wine, basil, salt, and pepper. Pour mixture over chicken and cover container with foil. Bake for 1 hour at 300 degrees. Remove from oven and spread with pimento and sour cream. Return to oven to keep warm. Serve chicken on a bed of wild rice.
