  • 2 firm pears, halved and seeded
  • 2 tablespoons of honey
  • 1 tablespoon of shallot, thin sliced
  • ½ cup of bleu cheese
  • 2 oz. of arugula, cleaned and dried
  • ¾ cup of toasted walnuts
  • Apple Cider Vinaigrette:
  • 1 garlic clove, minced
  • 1 tablespoon of Dijon mustard
  • ¼ cup of apple cider vinegar
  • 2 tablespoons of lemon juice
  • 1 tablespoon of honey
  • 1/3 cup of extra-virgin olive oil
  • Salt & pepper to taste

Preheat oven to 375 degrees.
On a baking sheet, place the halved pears and brush them with honey. Bake the pears in the oven for about 15- 20 minutes or until golden. Let them cool for 5 minutes.
Once the pears are cooled, slice the pears into half-inch slices.
In a small bowl, whisk together all the ingredients together to make the vinaigrette.
Using a salad bowl, add the arugula and the shallots with the vinaigrette and mix well.
On serving plate, top off the salad with walnuts and bleu cheese.
