  • 1/3 cup of sliced almonds
  • 1 ¾ cup of pasta, rotini pasta
  • 1 tablespoon of extra-virgin olive oil
  • 1 cup of tomato sauce
  • ¼ cup of pancetta, thin and squared cut
  • 1 small onion
  • 2 garlic gloves
  • Salt and pepper to season
  • ¼ cup of grated cheese

In a large pot, boil the pasta for 8-10 or until it is al dente.
Cut the pancetta in a thin and square manner. Mince the small onion and garlic cloves. This will be added the sauce.
In a medium saucepan, add a tablespoon of extra virgin olive oil and cook the mince onion and garlic until they are translucent. Next, lower the heat and add the pancetta and the almonds.
When the pancetta and almonds are up to a crisp, add the tomato sauce. Season the sauce with salt and pepper. Mix well until the flavors incorporate.
On a serving dish, place the pasta and pour the sauce on top of it. Top it off with grated cheese.
