Not Your Everyday Chicken

Ingredients
- 2 Tbs. olive oil
- 1 3.5-lb. chicken, cut into 8 serving pieces
- 2 med. onions, chopped
- 1 celery rib, chopped
- 1 carrot, chopped
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1/2 C. dry white wine
- 4 ripe tomatoes, peeled, seeded and chopped
- 6 basil leaves, torn into bits
- 2 tsp. chopped rosemary
- salt
- pepper
Directions
Heat the oil in a large skillet over medium heat. Rinse and pat the chicken pieces dry. Cook the chicken, turning pieces frequently until browned on all sides. Should take 15 minutes. Transfer chicken to a plate. Tip the pan and skim off all but 2 Tbs. fat. Add the onion, celery, carrot and peppers to the skillet. Cook, stirring occasionally, until vegetables are lightly browned. Should take 15 minutes. Return the chicken to the skillet. Add the wine and bring to a simmer. Stir in the tomatoes, basil, rosemary and salt and pepper to taste. Bring to a simmer, and cook, turning the pieces occasionally, for about 20 minutes. Serve hot.
